Peri-Peri Chicken Burger — Better Than the Drive-Through, Done in 30 Minutes

4 July 2026

The peri-peri chicken burger is one of those things that sounds like it requires restaurant equipment and a professionally trained cook, but actually comes together in under 30 minutes and tastes genuinely better than anything you will buy through a drive-through window. The trick is the perinaise — a simple two-minute peri-peri mayonnaise that does almost all the heavy lifting in terms of flavour — and cooking the chicken correctly so you get a proper sear without burning the marinade.

Once you make this, your weekend takeaway habit might change permanently.

What You Need (Serves 2)

For the Chicken

  • 2 large boneless, skinless chicken thighs (thighs stay juicier than breast under the heat)
  • 2 tablespoons STOKE peri-peri sauce
  • 1 tablespoon olive oil
  • Half a teaspoon smoked paprika
  • Salt and pepper
  • Neutral oil for the pan

For the Perinaise

  • 3 tablespoons good quality mayonnaise
  • 1 tablespoon STOKE peri-peri sauce
  • A squeeze of lemon juice
  • A tiny pinch of salt

To Build

  • 2 brioche buns, split and toasted
  • A few leaves of iceberg lettuce
  • 2 thick slices of ripe tomato
  • Sliced red onion
  • Pickles if you like them

Start With the Chicken

Put the chicken thighs between two sheets of baking paper and bash them lightly with a rolling pin or the bottom of a heavy pan until they are an even thickness throughout — roughly 1.5 to 2 centimetres. This is the step most people skip and it is the reason their chicken is dry at the thin ends and undercooked in the middle. Even thickness, even cook.

Mix the STOKE, olive oil, smoked paprika, salt, and pepper in a bowl. Add the chicken and coat well. This can be done up to 24 hours ahead of time and left in the fridge, or done just before cooking if you are making this on the fly. Even 15 minutes of marinating makes a difference.

In the Pan

Get a heavy pan hot over medium-high heat. Add a thin film of neutral oil. Place the chicken presentation-side down (the smoother side) and press it down lightly with a spatula for the first 30 seconds to ensure full contact with the pan. Cook for 5 to 6 minutes without moving it. You want the marinade to create a proper sear rather than a steam, so resist the urge to prod it.

Flip and cook for another 4 to 5 minutes. In the last minute, brush on a little extra STOKE and let it tighten in the heat. The chicken is done when it feels firm when you press the thickest part with a finger or when an instant-read thermometer reads 74°C internally.

Rest for 3 minutes on a board while you build everything else.

The Perinaise

Stir the mayonnaise, STOKE, lemon, and salt together in a small bowl. Taste it. It should be creamy, with a warm background heat and a faint sharpness from the lemon. This sauce is what turns a good chicken burger into an unreasonably good chicken burger.

Building the Burger

Toast the buns cut-side down in the chicken pan for 30 seconds to pick up all the leftover flavour from the cook. Spread perinaise on both sides generously. Lettuce first, then tomato, then chicken, then red onion, then more perinaise on the top bun. No structural reasons, just the order that works best for eating.

The STOKE Advantage

The depth of the sauce in STOKE means the perinaise is genuinely interesting rather than just a spicy mayo. The smoke carries through even when mixed with mayonnaise and it gives the whole burger a flavour profile that is harder to achieve with a thinner or more one-dimensional hot sauce.

Order STOKE and make these this weekend. Your household will thank you.
