Peri-Peri Smoked Chicken Thighs — The Only Recipe You Need This Weekend

Chicken thighs are the right choice for peri-peri. Not breasts. Not a whole bird if you are short on time. Thighs. They are forgiving on the heat, they stay juicy even if you slightly overcook them, the fat under the skin bastes the meat from the inside while the sauce is working from the outside, and they take on smoke better than any other cut. If you have been making peri-peri chicken with breast meat and wondering why it is always a bit dry — there is your answer.

This recipe is straightforward. The secret is in the overnight marinade and in not rushing the cook. Give it those two things and the result is genuinely restaurant-quality peri-peri chicken at home.

What You Need (Serves 4)

  • 8 bone-in, skin-on chicken thighs
  • 4 tablespoons STOKE peri-peri sauce (plus extra for basting and serving)
  • 2 tablespoons olive oil
  • Juice of one lemon
  • 4 garlic cloves, crushed
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • Half a teaspoon black pepper

The Night Before

Mix the STOKE peri-peri sauce, olive oil, lemon juice, garlic, smoked paprika, salt, and pepper in a bowl. Put your chicken thighs in a large zip-lock bag or a deep baking dish and pour the marinade over them. Massage it into every surface, under the skin if you can get there. Seal it up and put it in the fridge. Minimum four hours, but overnight is where the real magic happens — the acid works its way into the meat and the smoke from the sauce settles into every part of the chicken.

Take the chicken out of the fridge 30 minutes before you cook it. Cold chicken straight onto heat is how you end up with burnt skin and raw meat at the bone.

On the Braai (The Right Way)

Set up your coals for indirect cooking — a pile on one side, nothing on the other. You want the temperature to sit around 180°C, not roaring hot. Place the chicken skin-side down on the indirect side first and put the lid on. Cook for 35 minutes without touching it.

After 35 minutes, move the thighs over the direct heat, skin-side down. This is when you baste — brush a generous amount of fresh STOKE over the skin and let it cook for 4 to 5 minutes until the sauce tightens and the skin starts to colour. Flip, baste the other side, and repeat for another 4 to 5 minutes. You are looking for skin that is dark red, slightly sticky, and just starting to catch at the edges. That is exactly right.

In the Oven (When the Weather Is Being Difficult)

Preheat to 200°C. Place the marinated thighs skin-side up on a rack over a baking tray — the rack lets air circulate underneath and stops the skin going soggy. Roast for 35 minutes, then pull the tray out, baste the skin with fresh STOKE, and return to the oven on the top shelf under the grill for 5 to 7 minutes until the skin is blistered and charred in spots. Watch it closely in this phase.

Rest It

Five minutes on a board tented loosely with foil. Do not skip this. Everything you gained in moisture during the cook will run out onto the board if you cut it straight away.

Serve With

Turmeric rice, braai-style coleslaw, a wedge of lemon, and the bottle of STOKE on the table so everyone can add more. Some people want extra heat. Let them have it.
